Watermelon Mojito

It's scorching hot, and I desperately need something cool and refreshing. So I open the fridge to check if I have some drink in there. A bottle of coke. Naah!! I want something refreshing, and I.WANT.IT.NOW! And no, good old lemonade won't make the cut either.

So hubby dearest comes to the rescue. Presenting to you what he made for us :-D

He likes to call it "Watermelon Mojito".

Let's dive in to see how it's made. For this recipe you will need the following stuff:

1. Watermelon - 1 medium sized, cut into small cubes.
2. Salt - to taste
3. Sugar - 4 tsp (Add only if your watermelon ain't that sweet)
4. Mint leaves - a handful
5. Raita masala - 2/3rd tsp (Don't wonder why we are adding raita masala in juice, trust me it adds a really nice taste to the juice :-P)
6. Juice of 1 lemon
7. A big strainer
8. A big bowl
9. A good blender
10. Some ice cubes
11. A fancy glass to serve it in ;-)

Note - This will make appx. 1 litre of juice.

Take the watermelon cubes in small batches and blend them. In the last batch, also blend the sugar and salt along with the watermelon.
After blending, you will get nice red watermelon juice, but it has seeds and pulp. Use a big strainer and strain all the juice in a big bowl. You will need to put in some effort while straining the juice, so use a ladle to press down on the pulp.
Once you are done straining all the juice, add the juice of one lemon, crushed up mint leaves and raita masala. Mix it all up, add ice cubes and serve immediately.

It is an instant pick me up in this excruciating heat. Do give it a try.

Mexican Fiesta Salad

Finally here comes the first recipe, after more than an year of creating the blog! In the past year, I experimented and learnt a lot about cooking different stuff, and also got married! :-)

Me and my hubby both being foodies, love to try out new stuff in our humble kitchen.
Today I am posting about a really quick and easy, but extremely tasty (and bonus points for being healthy also ;-)) recipe, which is Mexican Fiesta Salad.

This recipe can be made with pretty much what all veggies you have lying in your fridge. Today I made it with the following ingredients:


1. Iceberg lettuce - a couple of leaves, roughly chopped

2. Tomato - 1 medium sized, sliced into small cubes (Remove the seeds)
3. Onion - 1 small sized, sliced into small pieces
4. American corn kernels - half a cob, roasted on gas stove, or boiled
5. Capsicum - 1 medium, sliced into small cubes (Can also add red and yellow bell peppers if you have them)
6. Cucumber - 1 medium, cut into small pieces
7. Grapes - a handful, sliced into halves (It will add aa little sweetness to the salad. You can also add grilled pineapple and I swear it will taste divine)
8. Nachos - broken up into small pieces, as much as you like :-D (They add a nice crunch to our salad)
9. Juice of 1 lemon
10. Salt - to taste
11. Black pepper - 1/3rd tsp
12. Mixed herbs seasoning - 1/2 tsp
13. Extra virgin olive oil - 1 tsp

Chop up the veggies and put them in a large bowl.

Take the lemon juice in a small bowl, add extra virgin olive oil, salt, pepper and mixed herbs to it. Mix it all well. (Pro tip: this works better as opposed to adding all the seasonings directly to the veggies, because then it doesn't mix evenly)
Add the mix to the veggies, and give it a toss.
Then add nachos and again toss everything. 

Voila! Our yummy Mexican fiesta salad is ready in no time!

About!

Hey Guys,

I'm Shubhangi, just your average girl next door. I'm a software engineer by profession, and my passion for cooking has just begun. I used to dish out pulao, noodles and pasta occasionally, but never learnt to cook serious stuff.

Then came a job assignment for which I had to move to a different city, and stay alone! And as I am too finicky about my food, I did not even give a fleeting thought to eating the office cafeteria food daily. From the beginning I knew I will cook my own food! So that's how I started my experiments with cooking!

I thought why not maintain a diary for my recipes, and since I am a bit of a geek, I decided to maintain it online - access anywhere, share with anyone, and never lose it :D

This blog will be about recipes, cooking tips, and hacks for beginners like me.
