Mexican Fiesta Salad

Finally here comes the first recipe, after more than an year of creating the blog! In the past year, I experimented and learnt a lot about cooking different stuff, and also got married! :-)

Me and my hubby both being foodies, love to try out new stuff in our humble kitchen.
Today I am posting about a really quick and easy, but extremely tasty (and bonus points for being healthy also ;-)) recipe, which is Mexican Fiesta Salad.

Doesn't it look yummy? Let's dive in to see how its made.


This recipe can be made with pretty much what all veggies you have lying in your fridge. Today I made it with the following ingredients:


1. Iceberg lettuce - a couple of leaves, roughly chopped

2. Tomato - 1 medium sized, sliced into small cubes (Remove the seeds)
3. Onion - 1 small sized, sliced into small pieces
4. American corn kernels - half a cob, roasted on gas stove, or boiled
5. Capsicum - 1 medium, sliced into small cubes (Can also add red and yellow bell peppers if you have them)
6. Cucumber - 1 medium, cut into small pieces
7. Grapes - a handful, sliced into halves (It will add aa little sweetness to the salad. You can also add grilled pineapple and I swear it will taste divine)
8. Nachos - broken up into small pieces, as much as you like :-D (They add a nice crunch to our salad)
9. Juice of 1 lemon
10. Salt - to taste
11. Black pepper - 1/3rd tsp
12. Mixed herbs seasoning - 1/2 tsp
13. Extra virgin olive oil - 1 tsp

Chop up the veggies and put them in a large bowl.

Take the lemon juice in a small bowl, add extra virgin olive oil, salt, pepper and mixed herbs to it. Mix it all well. (Pro tip: this works better as opposed to adding all the seasonings directly to the veggies, because then it doesn't mix evenly)
Add the mix to the veggies, and give it a toss.
Then add nachos and again toss everything. 

Voila! Our yummy Mexican fiesta salad is ready in no time!
